Why Commercial Cooking Equipment Costs Double
Every other commercial category on our books runs twenty to forty percent above its residential equivalent. Cooking equipment runs at double, and it is the one place where the commercial machine is genuinely a different appliance rather than a sturdier version of the same thing. Gas volume. A domestic range burner is rated in the low thousands of BTU. A commercial one is several times that, with the gas train, regulators and safety devices to match. Those are not scaled up domestic parts, they are a different class of component.
Duty cycle. A home oven runs an hour. A deck oven holds temperature for twelve, every day, and the thermal cycling that follows is what fatigues doors, seals, elements and controls.
Access. Commercial equipment is heavy, often built into a line under a hood, and frequently has to be disconnected and pulled before anything can be reached. That is labor before diagnosis starts.
Parts channel. One distributor, one price, and sometimes a lead time. There is no aftermarket alternative for a deck oven control the way there is for a domestic range.

The Failures We See Most
Component counts are too thin to publish as prices, but the pattern across 38 jobs is consistent and worth knowing.
Ignition is the most common complaint by a wide margin. Spark modules, electrodes and pilot assemblies live in an environment of grease, steam and constant cleaning, and cleaning is frequently what kills them: water gets where it should not during a wash down and the module never recovers. Ignition faults are also the cheapest end of this page, which is why they are worth acting on rather than working around with a lighter.
Temperature drift is second and the most expensive to ignore. A deck oven running thirty degrees under does not announce itself, it just produces inconsistent product until someone connects the complaints to the equipment. By then the cause, usually a thermostat or a probe, has often taken the controls with it.
Doors and seals are third and the most underestimated. A commercial oven door takes hundreds of cycles a day, and a hinge that has dropped or a seal that has hardened means heat escaping into a kitchen that is already too hot, longer recovery times between loads, and gas burned for nothing.
Gas and Electric Fail in Different Places
Which one you have changes both the fault list and how quickly a problem becomes urgent.
Gas equipment fails at the ignition and the gas train: spark modules, electrodes, pilot assemblies, safety valves and thermocouples. The parts are mostly inexpensive and the repairs sit at the lower end of our range. What makes gas different is that some faults are safety issues rather than performance issues, and a burner that lights unreliably is a burner accumulating unburned gas before it catches.
Electric equipment fails at the elements and the controls. Elements are straightforward and predictable; controls are the expensive branch, and on modern equipment with digital thermostats and programmable profiles a control failure can approach the top of our range on its own. The compensation is that electric faults are almost never dangerous, so a piece of electric equipment can usually keep running in a limited way while a part is on order.
That difference decides what we tell you when a part has to be ordered. On electric equipment there is usually a safe reduced mode. On gas, sometimes there is not, and we will say so rather than leave a kitchen improvising.
Cleaning Is What Breaks Most of This Equipment
This is the finding that surprises operators most, and it is consistent across the jobs we complete. Commercial cooking equipment fails from being cleaned far more often than from being used.
Pressure washing a line, spraying degreaser into a burner assembly, or hosing down around electrical enclosures puts water and caustic chemistry exactly where the controls live. The equipment survives service and then fails overnight after close, which is why so many of these calls arrive first thing in the morning.
The practical version: wipe rather than spray around any control, keep degreaser off electrodes and spark modules, and let anything that has been washed dry fully before it is fired. None of that slows a close down, and it prevents the most common failure we are called to.
Repair or Replace
Repair, essentially always, and the arithmetic is not close. A commercial range or deck oven is a five figure purchase plus installation, gas connection and often a hood modification. Our largest repair in this set at $2,556 is a fraction of that.
Commercial cooking equipment is also the most repairable thing in the kitchen: burners, valves, thermostats, elements, doors and controls are all individually serviceable on machines designed to work for twenty years. What ends one is a cracked deck or a chassis that has corroded through, not a failed component.
The exception is light commercial equipment in a heavy commercial setting, which we see in cafes and small kitchens: a machine specified for occasional use, running a full service every day. That equipment fails repeatedly regardless of what is fitted, and the honest answer there is that the specification is wrong rather than the appliance is broken.
What to Have Ready When You Call
Commercial cooking equipment is the category where a wasted visit costs the most, because the window to work on it is narrow. Three details prevent that.
- The data plate. Manufacturer, model and serial, usually on the back or behind the kick panel. On commercial cooking equipment the model determines whether a control is still made at all, and that answer changes the conversation entirely.
- Gas or electric, and the supply. Natural gas and propane equipment are not interchangeable and use different orifices and regulators. If the equipment was converted at installation, say so, because a converted appliance behaves differently when it misbehaves.
- When it can be off. Not when it is convenient, but the actual window between services. A technician who arrives at the wrong hour cannot work, and on this equipment that means a second visit rather than waiting twenty minutes.
Light Commercial in a Heavy Kitchen
A pattern worth naming, because it accounts for a meaningful share of the repeat calls we take in cafes, bakeries and small kitchens: equipment specified for light or occasional commercial use, put into a room running a full service every day.
It fails, gets repaired properly, and fails again within months, usually at a different point each time. Nothing is wrong with the repairs and nothing is wrong with the appliance in isolation. The machine is simply being asked for a duty cycle it was not built for, and no component swap changes that.
We say this out loud when we see it, because continuing to repair such a machine is a slow way of paying for a proper one. The honest recommendation in that situation is a specification change rather than another visit, even though the second is better business for us.
Scheduling Around Service
Cooking equipment cannot be repaired during service, and it usually cannot wait until next week either. In practice that means morning slots before prep, or the gap between lunch and dinner, and it is worth telling us which one works when you call rather than after we have booked.
Where a full repair needs a part on order, we will say whether the equipment can be run safely in a limited way until it arrives. On gas equipment that answer is sometimes no, and we would rather tell you that plainly than leave a kitchen guessing.
