An ice machine needs two different chemicals on two separate passes, roughly every six months, and they must never be mixed. A nickel-safe acid cleaner dissolves the lime scale that mineral-laden water leaves on the evaporator; a separate EPA-registered sanitizer kills the slime and algae that grow in a cold, wet, dark box.

Manitowoc’s own service literature puts both on a six-month interval and warns explicitly against mixing them, and the FDA classifies ice as a food, which is why commercial machines are held to a documented sanitation schedule rather than a “when it looks dirty” one.

Cloudy, small or slow ice is usually water chemistry and maintenance rather than a failed part — and the difference is worth knowing before anyone orders anything. The $99 visit tells you which one you have, and the fee is applied to the repair.

First, Which Machine Do You Have?

“Ice machine” covers three very different pieces of equipment, and they are not on the same maintenance schedule.

The ice maker inside your refrigeratorA small module in the freezer compartment fed by a water line through a filter. It has no cleaning cycle and no chemical service. Its entire maintenance programme is the water filter, the seal on the ice bucket, and keeping the freezer at the right temperature. This is the machine most households mean.
A standalone or undercounter ice makerA dedicated appliance, usually 15 or 24 inches wide, that makes clear cubes on its own evaporator and drains to a pump or gravity line. These do have a defined cleaning procedure, often a cleaning cycle button, and they scale up fast on hard water because they process far more water than a fridge module.
A commercial cuber or flakerManitowoc, Scotsman, Hoshizaki and similar, sitting on a storage bin in a restaurant, bar, clinic or office. These are regulated food equipment, are cleaned and sanitized as two separate documented operations, and are what most of the technical literature quoted below is written for.

The chemistry is the same in all three. Only the access, the volume and the paperwork change.

What Is Actually Growing In There

Two unrelated things build up inside an ice machine, and each needs its own treatment. Confusing them is the single most common maintenance error we see.

Mineral scale. Freezing water concentrates whatever is dissolved in it. Whirlpool puts it plainly in its own care instructions: minerals removed from the water during the freezing cycle eventually form a hard, scaly deposit in the water system, and cleaning regularly is what removes that mineral scale.

Manitowoc’s Parts and Service Communicator MII-106 describes what the cleaner is actually doing: ice machine cleaner contains citric and phosphoric acid, which breaks lime scale down from its solid state into a form soluble in water so it can be flushed out of the system. It is not a detergent. It is a controlled acid attack on calcium.

Biofilm. Separately, an ice machine is a cold, wet, dark, food-contact environment with air moving through it, which is an excellent home for algae and slime.

The same Manitowoc document defines the sanitizer’s role as removing algae and slime growth and disinfecting, and notes it is tested against a challenge bacterium chosen for being particularly resistant to chemical attack and to cold water — passing that test is what allows Manitowoc machines to carry the NSF label.

Acid does not do this job, and sanitizer does not dissolve scale. That is why the interval is two passes and not one.

Never mix the two. Manitowoc’s bulletin carries the caution in bold on the first page: do not mix cleaner and sanitizer together. They are separate operations in a fixed order — descale first so the sanitizer can reach the surface, then sanitize. Combining an acid with a disinfectant is also a genuinely bad idea in a small enclosed cabinet.

How Often: the Numbers the Manufacturers Actually Publish

Six months is the number almost everyone lands on, but the reasoning behind it differs by machine and it is worth knowing where the floor and the ceiling are.

Commercial machines: six months, both chemicalsManitowoc gives a recommended cleaner interval of six months and a sanitizer minimum of once every six months. Environments with high airborne yeast — a bakery is the example in the bulletin — need sanitizing more often than that.
There is also a floor, not just a ceilingAn unusual and useful detail from the same source: because the cleaner is corrosive, concentrations stronger than recommended and cleaning intervals shorter than two months must be avoided. Cleaner is not a weekly or monthly product. It is only required when there is visible lime scale on the evaporator or other parts. Over-cleaning damages the machine.

The Chemical Choice That Ruins Evaporators

This is the part that turns a maintenance job into a repair bill, and it is worth understanding even if you never touch the machine yourself.

Commercial evaporators are commonly nickel-plated. Scotsman’s service literature is direct about the consequence: its recommended products are safe on all ice machines including nickel-plated evaporators, and a cleaner that is not nickel-safe, or one used at the wrong dilution ratio, can damage the evaporator.

The same documentation adds two warnings that get ignored constantly — overuse of any acid cleaner may shorten evaporator life, and using bleach or other general sanitizing solutions may negatively affect evaporator life as well.

Put those together and the risk profile is clear. The three ways people damage an ice machine while trying to look after it are: a hardware-store descaler instead of a nickel-safe one, a stronger mix than the label calls for on the theory that more is better, and household bleach used as the sanitizer. An evaporator is not a cheap part, and none of those mistakes announce themselves for months.

There is also a preventive option most owners never hear about. Manitowoc recommends an approved filtration system with a polyphosphate scale inhibitor for all ice machine installations, and states it will significantly reduce how often cleaner is needed in hard water. Treating the water going in is cheaper than repeatedly acid-washing the machine that water passes through.

What Skipped Maintenance Costs, From Our Own Invoices

Ice maker work as a whole runs a $415 median, with the middle half of jobs between $340 and $512. That is the most expensive median of any appliance category we track apart from full sealed-system work, and the reason is that ice makers combine plumbing, refrigeration and electronics in one small assembly.

Here is the figure that makes the case for maintenance better than any argument. Across those 2,091 jobs, 79 ended with the water filter as the item replaced, at a $440 median invoice. Seventy-nine households paid for a technician, a truck and a diagnosis to receive a part that is sold in a supermarket and that the manufacturer asks you to change every six months.

Add the 40 frozen fill tube jobs at a $393 median — a failure driven by restricted flow and temperature, both of which trace back to filters and water quality — and roughly one in eighteen of our ice maker calls is a maintenance interval that was allowed to lapse.

This is also why we are careful about what we promise on the phone. A filter change is not something we would rather sell you than tell you about. If the machine on our screen is out of filter interval, the honest first move is to say so.

Safe to Do Yourself, and Where It Stops

  1. Keep the water filter on schedule and write the date on it. Six months on a refrigerator, or sooner if flow drops. This is the single highest-value thing an owner does, and per Whirlpool’s own guidance it directly protects cube size, output and dispensing speed. A marker line on the filter housing beats trying to remember.
  2. Look before you decide anything. Open the machine and look at the evaporator plates or the ice mold: chalky white or grey crust means scale. Look in the storage bin: pink, grey or black film on the walls or the door seal means biofilm, not scale. Smell the ice. Those three observations tell a technician more than any description of the symptom.
  3. If your machine has a cleaning cycle, use the manufacturer’s own chemical at the label dilution and nothing else. The procedure and the concentration are model-specific and printed on the machine’s own panel label and in its manual — those, not a generic recipe, are the instructions to follow. If your machine has no cleaning cycle, or the label is gone, or you are not certain the product in your hand is nickel-safe, stop there. That uncertainty is exactly the situation the evaporator warnings above are written for.

Beyond that point it becomes service work rather than housekeeping: dismantling a water distribution manifold, pulling and soaking an ice mold, clearing a frozen fill tube without deforming it, servicing a drain pump, or handling any machine where the scale has been left long enough to interfere with the harvest cycle.

Those involve refrigerant-side components, live electrical and parts that break if they are flexed cold. Commercial machines add a further reason to hand it over: in a regulated kitchen the cleaning has to be done to the manufacturer’s documented procedure and recorded, and a health inspector is entitled to ask.

Read the table as a maintenance argument rather than a price list. Six of the ten lines are failures that hard water, a lapsed filter or skipped sanitation make more likely, and every one of them costs more than the maintenance would have.

Hard Water Is the Variable Behind Most of This

Across our service area the water is not remotely uniform, and neither is how fast machines scale up. The same undercounter ice maker that goes years between cleanings on soft municipal water needs attention twice as often where the supply is mineral-heavy, and Manitowoc says as much when it puts scale-inhibiting filtration ahead of more frequent acid cleaning as the better answer in hard-water areas.

If your ice is cloudy, tastes flat or metallic, or the cubes have shrunk over the last year, water is the first suspect, not the machine.
